  • Organizes together with the Demi Chef de Partie the shift on his/her section about mise-en-place production and its service.
  • Takes orders from his/her Demi Chef de Partie and carries them out in the correct manner.
  • Together with his/her Demi Chef de Partie to write daily dry store, food requisitions and kitchen transfers on the appropriate forms for the approval of the Executive Sous Chef & Chef de Cuisine to achieve the high stock rotation desired in the section.
  • Maintains good employee relations and motivate colleagues.
  • Works to the specifications received by the Demi Chef de Partie regarding portion size, quantity and quality as laid down in the recipe index.
  • Takes on full responsibility during the absence of the Demi Chef De Partie and ensures that all set and agreed standards are adhered to.
  • Is responsible for completing the daily checklist regarding mise-en-place and food storage.
  • Attends daily and monthly meetings with the Chef de cuisine and other meetings as requested by the Executive Chef / Executive Sous Chef and/or Chef de Cuisine.
  • Reports any problems regarding failure of machinery and small equipment to the Chef de cuisine and follows up and ensures the necessary work has been carried out.
  • Checks the main information board re change of any Banquets or other information regarding the organization.
  • Keeps the section clean and tidy.
  • Passes all information to next shift:
  • About functions
  • Mise-en-place (report everything)
  • Make sure night is covered if required.
  • Accidents and sickness to be written in logbook and report to the Executive Chef / Executive Sous Chef.
  • Assists the Chef de cuisine in composing new recipes and menu ideas.
  • He/she has a complete understanding of, and adhere to the company's policy relating to fire, hygiene, and food safety.
  • The manager is authorized to assign the employee to any task within the department.

Qualifications:

  • Minimum 1 year experience in similar position.
  • High school diploma required.

Skills and Competencies:

  • Has a basic knowledge in cooking and willing to learn.
  • Reliable.
  • Ability to work well under pressure and in a multi-cultural environment.
  • Basic Food and Hygiene training certification.
  • Ability to communicate in English, strong communication skills, verbal, listen and writing.
  • Innovative and proactive.
