Role Context
The Commercial Manager - Butchery Categories is responsible for shaping the commercial direction of the meat and poultry portfolio while balancing customer demand, freshness, product quality, margin, waste, sourcing reliability, and regulatory compliance. The role requires strong coordination across commercial, quality, supply chain, operations, and store teams to ensure products are sourced competitively, handled correctly, available when required, and presented to customers at consistently high standards. Decisions made in this position directly influence category sales, gross margin, inventory turnover, shrinkage, customer trust, and long-term supplier performance.
Key Responsibilities
- Develop and execute the commercial strategy for Fresh Meat, Poultry, Processed Meat, and Value-Added Meat categories.
- Set category priorities aligned with sales growth, gross margin, profitability, customer demand, and market opportunities.
- Manage assortment planning and range reviews according to consumer preferences, seasonality, store requirements, and category performance.
- Develop pricing strategies that balance competitiveness, product quality, customer value, and required margin levels.
- Plan promotions and seasonal campaigns around key trading periods and consumption patterns.
- Lead negotiations with local and international suppliers covering product cost, annual trading agreements, investment plans, rebates, and promotional funding.
- Build long-term supplier partnerships that improve product quality, sourcing continuity, availability, and commercial returns.
- Monitor sales, gross margin, stock levels, inventory turnover, waste, shrinkage, and availability across assigned butchery categories.
- Identify performance gaps and implement corrective actions involving assortment, pricing, promotions, sourcing, or supplier performance.
- Work with Supply Chain and replenishment teams to maintain dependable product flow while minimizing overstock and freshness-related losses.
- Coordinate with Quality teams to ensure meat and poultry products comply with food safety, halal, quality, labeling, and regulatory requirements.
- Partner with Store Operations to maintain appropriate handling, storage, rotation, merchandising, and freshness standards.
- Track market developments, consumer preferences, competitor activity, and emerging demand across meat and poultry categories.
- Identify opportunities to introduce premium cuts, specialty products, prepared items, and value-added meat ranges.
- Support development of innovative products that strengthen customer choice and category profitability.
- Review supplier service levels, quality consistency, commercial performance, and contractual compliance.
- Use commercial reporting tools to evaluate category performance and support fact-based buying and pricing decisions.
- Drive continuous improvement initiatives that enhance product quality, reduce waste, strengthen margins, and improve customer satisfaction.
Ideal Profile
The preferred candidate should hold a bachelor 's degree in Business Administration, Commerce, Food Science, Agriculture, Supply Chain, or a related discipline. A minimum of 5-7 years of relevant experience is required within Commercial, Category Management, Buying, Merchandising, or Procurement roles involving Butchery, Fresh Food, Retail, hypermarkets, supermarkets, or FMCG. Strong practical knowledge of fresh meat, poultry, processed meat, supplier sourcing, product specifications, market dynamics, seasonality, pricing, and inventory management is essential. Candidates should have proven experience negotiating commercial agreements, managing supplier relationships, planning assortments, setting pricing strategies, and evaluating promotional performance. A strong understanding of food safety, halal requirements, quality assurance, and regulatory standards related to fresh meat products is also required. The role suits an analytical and commercially driven professional who can interpret sales, margin, waste, stock, and profitability reports and convert findings into clear category actions.
