Japanese Sando Bread Specialist

**Purpose**:
The Japanese Sando Bread Specialist will craft authentic, high-quality Japanese milk bread (shokupan) used in our signature fruit sandos. They will uphold Okawa’s commitment to traditional techniques while optimizing production to meet volume demands.

**Location**:This position is based in Riyadh, Saudi Arabia.

**Key Responsibilities**:

- Prepare shokupan dough daily using traditional Japanese tangzhong method
- Precisely shape and bake shokupan loaves to meet Okawa’s size and texture standards
- Monitor ingredient inventory, dough production, proofing, and baking to ensure consistent quality
- Slice and package shokupan for use in Okawa’s fruit sando creations
- Maintain immaculate hygiene and organization of the bakery area
- Train junior bakers on shokupan techniques
- Coordinate with procurement on ingredient sourcing
- Recommend process improvements to increase efficiency and reduce waste
- Ensure compliance with all food safety regulations and Okawa policies

**Required Skills**:

- Minimum 5 years experience in high-volume Japanese bakeries
- Expert at milk bread making, especially tangzhong method
- Deep knowledge of bread science - fermentation, gluten development, etc.
- Able to adjust recipes and troubleshoot issues to maintain consistency
- Highly organized with strong time management abilities
- Effective trainer with excellent communication skills
- Fluent in Arabic, English preferred

**Key Performance Indicators**:
Production Volume:

- Daily shokupan production quota met (target at least 120 loaves/day)
- 85%
- 100% compliance with FEFO inventory management
- Proofing and baking cycle times within target range

Safety & Hygiene:

- Zero safety incidents
- 100% completion of daily sanitation checklists
- No critical violations during health inspections
