**Key Responsibilities:**

* Embody Fairmont philosophy, standards of service and operating procedures.
* Have complete knowledge of all menu items and services provided.
* Be aware of and apply the procedures concerning hotel fire and life safety/emergency procedures.
* Possess excellent knowledge of the menus as well as the preparations and presentations.
* Handle minor complaints and report them to the Manager or Assistant for proper action.
* Check staff punctuality, grooming and performance.
* Maintain consistency in quality of food, beverage and service.
* Enforce check control procedures for every bill presented to the guest.
* Ensure that staff applies the necessary precautions regarding hotel food safety and hygiene standards.
* Check set up/mise-en-place prior to start of operations.
* Ensure co-operation and smooth communication between staff and other departments.
* Ensure the smooth and efficient operation.
* Liaise with kitchen crew on daily operation.
* Keep all breakage to a minimum and maintain exact reports on it.
* Update the logbook daily.
* Submit guest/staff incident reports when required.
* Attend F&B briefing/meeting during the absence of the Assistant Manager.
* Assist in any other tasks as specified by superior.
* Join the monthly variance and report cost.
* Follow up stock situation and make necessary transfers.
* Provide amenity numbers daily from the system.
* Take care of wastage beverages and document them properly.
* Carry out any other reasonable duties and responsibilities as assigned by management team.
* Supervise and oversee the operation and administration of the outlet.
* Assign responsibilities to subordinates.
* Supervise, oversee and assist subordinates during busy meal periods.
* Ensure that all staff report for duty on time, wearing complete uniform.
* Assist in the building of an efficient team of employees by taking an active interest in their welfare, safety and development.

**Qualifications:**

* University degree in Food & Beverage or Hospitality Management.
* Minimum 2 years' experience in a similar position.
* Motivator and self-starter.
* Displays initiative.
* Commitment to professional values.
* Team leader/builder.
* Neat appearance.
* Physically fit.
* Good posture.
