Job Summary:

As a Head Butcher at Millennium Hotels and Resorts MEA, you will be responsible for overseeing the meat preparation and butchery operations within the kitchen department. Your role involves ensuring the highest standards of meat quality and collaborating with the kitchen team to deliver exceptional dining experiences.

Key Responsibilities:

  1. Lead and Manage the Butchery Team: Direct and supervise a team of butchers and meat cutters to ensure seamless meat preparation and butchery operations.
  2. Ensure Meat Quality and Presentation: Maintain the highest standards of meat quality, cut, and presentation to meet the expectations of our discerning guests.
  3. Oversee Meat Handling and Storage: Ensure the proper handling, storage, and preparation of meats and poultry to prevent contamination and maintain food safety standards.
  4. Maintain Food Safety and Sanitation: Adhere to strict food safety and sanitation standards within the butchery to prevent cross-contamination and maintain a clean working environment.
  5. Train and Mentor Butchery Chefs: Provide training and mentorship to butchery chefs to promote continuous improvement in meat preparation techniques and ensure consistency in meat quality.
  6. Assist with Budgeting and Procurement: Assist in the management of butchery budgets, procurement, and inventory control to ensure efficient operation of the butchery.
  7. Foster a Culture of Excellence: Promote a culture of excellence in meat craftsmanship and quality control to ensure that our guests receive the highest quality meat products.
  8. Ensure Efficient Butchery Operations: Ensure the efficient operation of the butchery, including equipment maintenance, to minimize downtime and maximize productivity.
  9. Contribute to Recipe Development: Collaborate with the culinary team to develop and adapt new recipes for meat dishes to enhance our menu offerings.
  10. Stay Up-to-Date with Meat Trends: Stay informed about the latest meat trends, cuts, and sourcing to ensure that our menu offerings are innovative and appealing to our guests.
  11. Participate in Culinary Events: Participate in special culinary events, promotions, and guest interactions related to meat dishes to enhance the guest experience.
  12. Collaborate with Other Departments: Collaborate with other culinary departments to ensure a cohesive dining experience and maintain high standards of quality and service.
  13. Adhere to Company Policies: Adhere to the company's environmental, health, and safety procedures and policies to ensure a safe and environmentally friendly working environment.
