Role Overview

This position oversees and directs all aspects of the operation in the Butchery Section, working under the supervision of the Head Chef. Key responsibilities include:

  • Supervising the pre-preparation of meat, poultry, and fish.
  • Sourcing and supplying each section with sufficient stock of meat, poultry, and fish.
  • Inspecting incoming and outgoing meat, poultry, and fish for quality and quantity, reporting discrepancies to the Sous Chef.
  • Maintaining accurate storage standards for meat, poultry, and fish.
  • Ensuring adherence to portion control policy and standard packing instructions.
  • Reviewing daily menus and guidelines to determine production needs.
  • Preparing daily requisitions based on forecasted menu requirements.
  • Collaborating with other sections regarding requirements, cleanliness, wastage, and cost control.
  • Ensuring a clean and organized work environment in the Butchery Section.
  • Maintaining equipment correctly and performing regular maintenance tasks.
  • Fostering effective employee relations.
  • Adhering to Calo's hygiene and sanitation standards.
  • Complying with Calo's Health, Safety & Hygiene policy.
