Bekal International Holding Company is actively seeking a dedicated and highly skilled Arabic Grill Chef
to join our team in Riyadh. This is a hands-on, specialist role requiring deep expertise in preparing, marinating, and grilling all authentic Arabic charcoal and oven-cooked dishes. Core Responsibilities & Focus:

  • Grill Station Ownership:
    Take full ownership of the grilling station, managing all operations from prep to plate.
  • Expert Grilling Execution:
    Flawlessly execute the cooking of all Arabic grilled items (
    Kebab, Awsal, Shish Tawooq, Lamb Chops, Arayes,
    etc.), ensuring optimal flavor, texture, and doneness using both charcoal and gas grills.
  • Meat Handling & Marination:
    Select, cut, trim, and prepare all meat, poultry, and fish for grilling. Master the creation and application of authentic Arabic marinades and spice rubs.
  • Quality Control:
    Maintain the absolute highest standards for taste, presentation, and consistency for all grilled dishes, particularly during peak service hours.
  • Hygiene & Safety:
    Ensure the grill station and all related equipment are meticulously clean, well-maintained, and operating in strict compliance with all HACCP and local health and safety regulations.
  • Inventory & Waste Management:
    Monitor stock levels for grill ingredients, ensure proper storage and rotation, and actively work to minimize food waste.
  • Equipment Maintenance:
    Perform daily checks and basic maintenance on all grilling equipment to ensure continuous, high-performance operation.


Required Skills & Qualifications:

  • Specialized Experience:
    Minimum of
    3-5 years
    of hands-on experience working specifically as a
    Grill Chef
    or
    Grill Station Head
    within an Arabic or Middle Eastern restaurant setting.
  • Technical Mastery:
    Proven expertise in various grilling techniques and a deep, intuitive understanding of meat thermal science and texture control.
  • Arabic Culinary Focus:
    Comprehensive knowledge of the ingredients, spice blends, and preparation methods specific to high-quality Arabic grilling.
  • Physical Stamina:
    Ability to thrive in a high-volume, high-heat, and fast-paced kitchen environment, standing for extended periods.
  • Attention to Detail:
    Meticulous approach to mise en place, portion control, and final plate presentation.
  • Communication:
    Basic communication skills in English are preferred; proficiency in Arabic is a significant advantage.
