Job Summary
The Butcher Assistant supports the Butcher and kitchen team with the preparation, handling, storage, and organization of meat, poultry, and other related products. The role ensures that all products are handled safely, hygienically, and according to the required quality and preparation standards.
Key Responsibilities
Assist the Butcher with the preparation and processing of meat, poultry, and other products. Wash, clean, trim, portion, and prepare meat according to instructions. Assist with cutting and portioning products under the supervision of the Butcher. Prepare and organize ingredients and equipment required for daily production. Ensure meat products are properly labeled, dated, stored, and handled. Check the quality, freshness, and condition of meat and other products. Follow proper temperature-control and food-storage procedures. Maintain cleanliness and sanitation of work areas, equipment, knives, cutting boards, and utensils. Follow all food safety, hygiene, and workplace safety procedures. Assist with receiving and storing meat deliveries when required. Maintain proper stock rotation using FIFO (First In, First Out) procedures. Minimize product waste and use ingredients efficiently. Keep the butchery area organized and ensure equipment is safely stored after use. Dispose of waste properly and maintain a clean working environment. Support the kitchen and food preparation team during busy periods. Perform other duties related to butchery and food preparation as assigned by the supervisor. Qualifications & Experience Previous experience in a butchery, restaurant, hotel, catering operation, or food production environment is preferred. Basic knowledge of meat and poultry handling is an advantage. Ability to follow instructions and food safety procedures. Basic understanding of hygiene and sanitation standards. Good teamwork and communication skills. Willingness to learn professional butchery techniques. Ability to work efficiently in a fast-paced environment.
