About the Role:

We are seeking an experienced and skilled Senior Butcher Manager to oversee all aspects of meat production in our hotel's kitchen. As a key member of our culinary team, you will be responsible for ensuring high-quality products while maintaining efficient operations.

Main Responsibilities:

  1. Plan and supervise the production of raw poultry, meat, seafood, and fish for various outlets, including à la carte orders, buffet preparation, banquet catering, and outside events.
  2. Maintain comprehensive product knowledge on ingredients, equipment, market trends, and food safety standards.
  3. Develop and implement effective solutions to ensure timely delivery of products, minimize waste, and optimize labor costs.
  4. Collaborate with the Executive Chef and Section Heads to create menus, recipes, and quality standards that meet the hotel's standards.
  5. Train and mentor junior staff members to enhance their skills and knowledge in meat production.
  6. Foster positive working relationships with colleagues and external partners to achieve excellent guest experiences.
  7. Ensure adherence to health, safety, and environmental regulations, as well as company policies and procedures.
  8. Participate in continuous improvement initiatives to enhance efficiency, productivity, and overall performance.

Requirements:

  • Secondary school certificate or equivalent level of education.
  • Two years of experience as Assistant Head Butcher or similar role.
  • Excellent communication and leadership skills.
  • Fluency in English and Arabic language is an advantage.
  • Computer literacy (MS Office and Internet).
