Job Title: Senior Chef De Partie - Food Operations Manager
The Demi Chef De Partie is a key team member in supporting the kitchen operations, ensuring seamless food service and exceptional quality at all times.
Key Responsibilities:
- Mise-en-Place Management: Collaborate with the Chef de Partie to coordinate shift duties, including mise-en-place production and service.
- Task Execution: Receive instructions from the Chef de Partie and execute tasks efficiently.
- Daily Operations: Assist in preparing daily dry store, food requisitions, and kitchen transfers for approval by the Executive Sous Chef & Chef de Cuisine.
- Employee Relations: Foster good employee relations and motivate colleagues to achieve high performance standards.
- Leadership: Take full responsibility during the absence of the Chef De Partie, ensuring all set standards are adhered to.
- Cooking Standards: Prepare food according to specifications received from the Chef de Partie, adhering to portion size, quantity, and quality as laid down in the recipe index.
- Food Safety: Complete daily checklists regarding mise-en-place and food storage, maintaining high standards of food safety.
- Communication: Attend daily and monthly meetings with the Chef de cuisine and other meetings as requested by the Executive Chef / Executive Sous Chef and/or Chef de Cuisine.
- Problem-Solving: Report any problems related to machinery or equipment failure to the Chef de cuisine and follow up to ensure necessary work is carried out.
- Information Sharing: Check the main information board for changes in banquets or other relevant information and pass on details to the next shift.
- Cleaning and Organization: Maintain a clean and tidy section, adhering to high standards of cleanliness and organization.
- Accidents and Sickness: Record accidents and sickness in the logbook and report to the Executive Sous Chef & Chef de Cuisine.
- Presentation and Hygiene: Ensure Commis Chefs on his/her section adhere to personal hygiene standards and maintain a complete understanding of company policies relating to fire, hygiene, and food safety.
Qualifications:
- Certification: Hold a certification of culinary training or apprenticeship.
- Education: Possess a High School Diploma.
- Experience: Minimum 2 years' experience as Commis 1.
Skills and Competencies:
- Computer Skills: Basic computer skills are a plus.
- Reliability: Demonstrate reliability and ability to work well under pressure.
- Teamwork: Exhibit strong teamwork skills, communicating effectively in English and contributing to a positive work environment.
- Innovation: Showcase innovative and proactive approaches to problem-solving and task execution.
