Job Overview

We're seeking an experienced Executive Butcher and Production Lead to oversee and direct all aspects of the butchery section in our kitchen. This role will be responsible for ensuring that our high standards of quality and efficiency are maintained at all times.

Main Responsibilities

The daily responsibilities of this role include:

  • Supervising and participating in the preparation of meat, poultry, and fish.
  • Sourcing and supplying each section with sufficient quantities of meat, poultry, and fish.
  • Inspecting incoming and outgoing stock to ensure it meets our quality and quantity standards, and reporting any discrepancies to the Sous Chef.
  • Maintaining accurate inventory records and conducting regular stock takes.
  • Ensuring that meat, poultry, and fish are stored in accordance with established health and safety guidelines.
  • Preparing daily requisitions based on forecasted menu requirements.
  • Collaborating with other sections to ensure smooth production, minimize waste, and maintain a clean and organized working environment.
  • Performing routine maintenance and cleaning tasks to ensure equipment is in good working order.
  • Fostering effective relationships with colleagues and promoting a positive work environment.
  • Ensuring compliance with Calo's Health, Safety & Hygiene policy and maintaining high standards of personal hygiene.
  • Carrying out additional duties and special projects as assigned by management.

Ideal Candidate Qualifications

  • A professional kitchen apprenticeship or chef's training course would be beneficial.
  • Proven experience in leading team members in a fast-paced kitchen environment.
  • Previous experience of at least 5 years in high-volume butchery practices in reputable establishments.
  • Excellent communication skills in English.
  • Familiarity with waste management principles would be advantageous.
