We are seeking a highly experienced Executive Culinary Director to join our team at El Seif Engineering Contracting Company.
About the Role:
The successful candidate will be responsible for directing and supervising the preparation and cooking of food for client employees, ensuring adherence to recipes and serving portions. They will also supervise cooks and kitchen employees in food preparation, sanitation, and production.
Key Responsibilities:
- Directs, supervises, and assists in the preparation and cooking of food for client employees
- Responsible for the adherence to recipes and serving portions of all items of food
- Supervises cooks and kitchen employees in food preparation, sanitation, and production
- Responsible for writing daily food requisitions for all items needed in food production area
- Trains cooks in proper cooking procedures for requested menu items
- Inspects and tastes food for quality
- Responsible for the cleanliness and safety of the food preparation equipment and area at all times
- Plans, organizes, and supervises food production and services
- Writes the daily issue requisitions from planned menus for raw food in advance to ensure proper handling procedures are followed
- Directs cooks in recipe usage and works with them until fully trained
- Assigns the preparation of items from the cook's work sheet to the cooks and directs production of these items
- Schedules work load and equipment usage to maintain even flow of work to meet meal service schedules
- Tastes food and makes recommendations regarding recipes for improvement of flavour and quality
- Supervises preparation and service of all foods required for the project
- Assists and directs proper storage of cooked food items prepared in advance
- Performs other related duties not specifically enumerated in this job description, which may from time to time be assigned by supervisors
- May work variable hours as circumstances require
Requirements:
To be successful in this role, you will need strong leadership skills, excellent culinary knowledge, and the ability to work under pressure. You should also have experience in food service operations and be able to supervise and train staff members.
