Job Description

The Senior Meat Preparation Specialist will be responsible for overseeing all aspects of the Butchery Section, ensuring seamless operations. Key duties include:

  • Leading team members in meat preparation, poultry, and fish.
  • Supplying each section with necessary quantities of meat, poultry, and fish.
  • Conducting quality checks on incoming and outgoing meat, poultry, and fish, advising the Sous Chef of any discrepancies.
  • Maintaining proper storage and handling procedures for meat, poultry, and fish.
  • Implementing portion control and packaging standards.
  • Coordinating with other sections to ensure efficient operations, waste management, and cost control.
  • Ensuring a clean and well-organized workspace in the Butchery Section.
  • Maintaining equipment properly and performing routine maintenance tasks.
  • Fostering positive relationships among employees.
  • Adhering to Calo's high standards for hygiene and sanitation.
  • Complying with Calo's Health, Safety & Hygiene policy.
