Amaken is seeking an experienced and passionate Chef de Partie (Cold Kitchen) to join a well-established fine dining Lebanese restaurant in Riyadh. This position requires strong expertise in traditional Lebanese cold mezze and the ability to work independently in a high-end, fast-paced culinary environment.
Key Responsibilities:
Prepare and present a variety of authentic Lebanese cold mezze, including hummus, mutabbal, tabbouleh, fattoush, labneh, stuffed vine leaves, and other cold appetizers.
Ensure all dishes are prepared according to traditional Lebanese recipes with attention to detail and presentation.
Manage the cold section independently—from mise en place to final plating—ensuring smooth and efficient operation.
Maintain the highest standards of cleanliness, organization, and hygiene in accordance with food safety regulations.
Monitor ingredient freshness and stock levels; report replenishment needs promptly to the Sous Chef.
Train and mentor junior staff on Lebanese cold dish techniques and presentation standards.
Ensure consistency in flavor, portioning, and plating across all cold kitchen offerings.
Contribute creative ideas for new menu items and assist in seasonal updates for the cold section.
Qualifications:
Minimum 3 years of experience as a Chef de Partie or Demi Chef in a Lebanese or Middle Eastern kitchen.
Proven expertise in preparing Lebanese cold mezze using traditional methods and ingredients.
Ability to work efficiently under pressure in a quality-driven kitchen environment.
Culinary diploma or equivalent professional certification is a strong advantage.
High attention to detail, organizational skills, and a commitment to excellence.
