Job Title: Sous Chef – Recipe DevelopmentJob Summary

The Sous Chef – Recipe Development is responsible for developing, improving, and standardizing recipes for a continuously changing menu. This role covers the complete recipe process, including ingredients, cooking techniques, production methods, workflows, equipment usage, and documentation. The objective is to create clear SOPs that ensure consistent quality, efficiency, and repeatability at scale. The position reports to the General Manager.

Key Responsibilities

  • Develop and refine recipes, including ingredients, cooking techniques, and production methods
  • Define clear cooking steps, workflows, and preparation sequences for each recipe
  • Test and select the most effective production methods to ensure consistency and efficiency
  • Recommend appropriate equipment and cooking techniques to improve quality, speed, and cost efficiency
  • Standardize recipes into clear, repeatable SOPs
  • Accurately cost recipes, including yields, portions, and production impact
  • Evaluate raw materials and ingredient alternatives to optimize quality and cost
  • Maintain complete recipe documentation covering prep, cooking, holding, and finishing
  • Train kitchen staff on new or updated recipes, workflows, and SOPs
  • Support the kitchen during major menu rollouts or production changes when required
