THEPOSITION

Organizes kitchen operationsand prepares and serves a range of dishes whilst supervising juniormembers of the Kitchen Brigade. Promotes the work culture and thecompanys core values.

DUTIES &RESPONSIBILITIES

  • To reportfor duty punctually wearing the correct uniform and name badges atall times
  • Organize shifting in the sectionwith regard to miseenplace production and its service
  • Give tasks to Demi Chefs and Commis Chefs and check thatthey are carried out in the correct manner
  • Write daily wine dry store food requisitions and kitchentransfers on the appropriate forms for the approval of theExecutive Chef / Executive Sous Chef in order to achieve the highstock rotation desired in his/her section.
  • Maintain good colleagues relations and motivatecolleagues
  • Ensure that training on a onetoonebasis has been carried out and comprehended.
  • Check on a daily basis food preparation regarding portionsize quantity and quality as laid down in the recipeindex.
  • Responsible for completing the dailychecklist regarding Miseenplace and food storage.
  • Attend daily and monthly meetings with the Chef decuisine and other meetings as requested by the Executive Chef /Executive Sous Chef.
  • Report any problemsregarding failure of machinery and small equipment to the Chef decuisine and to follow up and ensure the necessary work has beencarried out.
  • Check the main information boardregarding changes in any Banquets or other information regardingthe organization.
  • Keep the section clean andtidy.
  • Pass all information to the nextshift
  • Accidents and sickness to be written ina log Book and reported to the Executive Chef / Executive SousChef.
  • Check Demi Chefs / Commis Chefs onhis/her section: e.g. regarding personal hygiene.
  • Assist the Chef de cuisine in composing new recipes andmenu ideas.
  • Have a complete understanding ofand adhere to the companys policy relating to fire hygiene andsafety.

QUALIFICATIONS&REQUIREMENTS:

  • Reading writing and oral proficiency in the Englishlanguage
  • Strong leadership training andmotivational skills.
  • Strong organizationalskills and ability to work in a stressful fastpacedenvironment.

EXPERIENCE:

  • Minimum 2 years cookingexperience.
